Lemon Chicken

Ingredients:

4 boneless skinless chicken breasts

¼ lemon juice

1/3 cup water

2 cloves minced garlic

1 tsp thyme

Spray slow cooker with non-stick cooking spray. Place chicken in crock pot. Concentrate juice, water, garlic, and thyme in a small bowl, pour over chicken. Cover and cook on low 8 hours or high 4 hours.

Ranch Chicken

Ingredients:

6 boneless skinless chicken breasts

1 can condensed cream of chicken soup

1 envelope ranch dressing mix

½ cup water

½ cup sour cream

2 tbsp ranch dressing

2 tbsp flour

Spray slow cooker with non-stick cooking spray. Place chicken breasts in crock pot. In a small bowl, Concentrate soup, ranch dressing mix, and water; pour over chicken. Cover and cook on low 8 hours or high 4 hours. Remove chicken from crock pot. Stir in sour cream, ranch dressing, and flour; replace chicken. Cover and cook on high 20 minutes.

Note: Ranch chicken leftovers are excellent for sandwiches, chicken tortilla wraps, or a tasty chicken casserole.

How to make it:

Sprinkle salt and pepper over the chicken and then dredge them in flour, shaking off the excess. Preheat a skillet over a medium heat until it can evaporate droplets of water you drop into it. Pour a slight olive oil into the pan. You could also use canola oil or any fat with a high smoke point. You should coat the bottom of the pan with oil but that is enough.

Add the chicken breasts to the hot pan and sear them for a join of minutes until they are golden brown. Turn them over and sear the other side. If you are going to duplicate this recipe, do two chicken breasts at a time. Crowding the skillet means you will not be able to brown all your chicken properly.

Turn the heat down to low, and then add chicken broth. It needs to come a third of the way up the chicken breast. If you add to much you will be boiling the chicken, which is not what you want. Add the onions, rosemary, oregano, garlic and lemon.

Cover the pan with a lid that fits tightly and cook the chicken breasts over a low heat until they are done. They are done when a meat thermometer reads 165 degrees F in the thickest part of the chicken breast. If you do not have a meat thermometer, cut into the chicken. It is done when it is white all the way straight through with no hint of pink in the middle.

Crock Pot Chili - Easy Recipes For The Best Chili

If you haven't used your crock pot recently, its time to pull it out of the cupboard. Crock pots are perfect for those busy weeknights. Here are 3 distinct chili recipes for a chilly evening.

Mom's beloved Chili

1 pound ground beef ; browned, drained

1 can pork and beans

1 can chili beans

1 regular can tomato sauce

1 teaspoon cumin

1 teaspoon chili powder

Red pepper ; to taste

Salt ; to taste

Mix all ingredients in crock pot. Cook on Low for 3 to 4 hours.

Navajo Beef And Chile Stew

3 pound lean beef stew meat ; cut 3/4 " cubes

1 large onion, chopped

2 garlic cloves, minced

1 can ready-cut tomatoes with juice - (14 1/2 oz)

1 can diced green chiles - (7 oz) drained

1 can whole-kernel corn - (8 1/2 oz) undrained

1 teaspoons dried oregano leaves, crushed

1 teaspoon ground cumin

1 teaspoon salt

1 teaspoon ground red pepper

2 tablespoon yellow cornmeal

Combine all ingredients, except cornmeal, in a slow cooker, mixing well. Cover and cook on Low for 7 to 8 hours or until meat is tender.

20 Minutes before serving:

Turn control to High. Stir in cornmeal. Cover and cook on High 20 to 25 minutes.

No-Bean Chili

2 pounds ground beef

(or cubed lean stew beef)

1 can tomato sauce - (8 oz)

1 can tomato paste - (6 oz)

1 can stewed tomatoes - (16 oz) ; (optional)

2 tablespoon chili powder

1 teaspoons salt

1 teaspoon hot pepper sauce ; or more

Combine all ingredients in slow cooker. Cover and cook on Low for 8 to 10 hours. (Add a can of your beloved beans if you wish, but then it wouldn't be No-Bean Chilli.)

This recipe yields 4 to 6 servings.

Chicken Salad Recipes - Chicken Macaroni Salad

Here is a basic chicken salad recipe that's suitable for lunch, dinner or a potluck meal.

1 7oz. Pkg. Creamette elbow macaroni

1 1/2 to 2 pounds chicken breast

1 small red onion, diced

1 green bell pepper

1 celery stalk, chopped

Salt and Pepper to taste

2 boiled eggs, chopped

Mayonnaise

Frozen peas

Directions

Cut up vegetables. Cook the noodles and add the frozen peas at the last 3 minutes of the boiling noodles. Drain and rinse with cold water.

Add vegetable, mayonnaise, noodles and peas then the chicken. Using the canned chicken, add the water from the can. Add at the end with the rest so it does not break up too much. You'll have to add more mayonnaise as it soaks up about 1 to 2 hours later.

If using cooked chicken, add onion, celery together until done. Cool cooked chicken; dice. Add salt and salad dressing or mayonnaise. Add chopped eggs on top. Decoration with paprika.

1 (15 oz.) can chunk pineapple, drained

In a large bowl, concentrate chicken, pineapple, celery, oranges, olives, bell pepper, and onion. Blend mayonnaise and mustard. Toss moderately with chicken. Cover and chill some hours. Just before serving, mix in chow mein noodles. Turn salad onto lettuce lined salad plate. Serve with crackers.
